Oven-baked cod

Not a fan of complicated fish recipes? Try our easy oven dish! Here, fresh cod is given a refreshing, Mediterranean touch with capers, cherry tomatoes, and olives. Delicious, pure flavours!

  • 400 g cod fillets, skin on
  • 400 g cherry tomatoes
  • 1/2 pointed pepper, red
  • 1 pointed pepper, yellow
  • 2 tbsp capers
  • 130 g olives, mixed
  • 4 garlic cloves
  • 4 sprigs of thyme, fresh
  • 2 sprigs of rosemary


Step 1 

Cut the fish into 6 portions and cut the peppers into rings. Crush the garlic cloves.  

Step 2 

Place all the vegetables, herbs, capers, and olives in a shallow casserole dish (we used the Barcelona Evershine) or oven dish. Place the fish among the ingredients. Sprinkle generously with olive oil, making sure all ingredients are coated. Season with salt and pepper. If you are preparing this dish in advance, this is the time to place it in the fridge. 

Step 3 

Remove your dish from the fridge once your guests have arrived. Preheat the oven to 180°C. 

Step 4 

Place the dish in the oven. Your fish is ready after 20 to 25 minutes at 180°C. Enjoy! 



- You can use any type of fish you like. For example, replace the cod with salmon or sea bass.
