- 3 to 4 fennel bulbs
- 1 handful of parsley (finely chopped)
- Juice of ½ lemon
- ½ tsp chilli flakes
- Olive oil
Wash and clean the fennel, cutting off 0.5-cm thick slices. Set aside the fennel leaves.
Coat the slices with olive oil and season with salt and pepper. Heat your griddle pan until it is hot throughout, then grill the slices until they turn golden brown.
Meanwhile, prepare the mustard dressing. Mix the mustard, honey, parsley and lemon juice with 8 tablespoons of olive oil. Stir well, then season with salt, pepper and chilli flakes.
Drizzle the dressing over the grilled fennel and garnish with the fennel leaves. Enjoy!
