Care & use

  • The bottom of my pan is not completely flat, is this correct?

GreenPan nonstick pans are made from aluminum, a pan is not always 100% flat when it is cold. The moment that the pan heats up, the bottom should become flat.

In case the pan does not flatten anymore, it could come due to a thermal shock. A thermal shock usually happens due to a sudden rapid temperature change. The most common situations which can cause a thermal shock:

    • A cold pan is put on a high heat, especially with induction hobs, which heat up very rapidly. We therefore advice to heat up the pan slowly.
    • A hot pan comes in contact with water. For this reason, it is important to let your cookware cool down before washing, or even dipping it, into water.
  • How can I remove brown/black spots from the non-stick layer of my cooking pan?

Brown or black spots are normally a layer of carbonization which causes food to stick to the pan during cooking. Carbonization occurs because of a combination of overheating and not enough oil/fat or the wrong type of oil/fat to see which oil is most suitable for cooking).

These types of persistent stains can be removed with a thorough cleaning:

1- Fill the pan halfway up with water and a little bit of washing-up liquid.

2- Bring it to the boil. The cooking process should remove the charred residue.

3- The rest of the pan can be cleaned with water and washing-up liquid.

If these steps do not achieve optimal results, we recommend using a melamine sponge. These sponges are widely available at low prices. Use the sponge with some water and it should remove the carbonization, restoring the non-stick layer to its original state.

  • My cast iron or enamelled pan has burnt food on the inside. What can I do?

Food usually burns on the inside of the pan because of the pan being placed on an extremely high heat setting too quickly. We recommend heating-up the pan gradually.

The best solution for this typical problem is to soak the pan with water and cleaning vinegar. After soaking, the pan can be cleaned with washing-up liquid and a soft brush to achieve the optimal result.

  • Can I use my GreenPan on my AGA oven/hob?

GreenPan pans are fully compatible with Aga hobs. Please ensure that pans do not overheat, as this will cause the ceramic coating to also overheat, which will cause carbonization in the pans.

  • My stainless-steel pan has discolouration or white spots on it. How can they be removed?

This is probably so-called rainbow discolouring. All stainless-steel pans can show up some rainbow discolouring. This discolouring could be caused by several circumstances such as a reaction to a certain type of water, a reaction to calcium in the water, salt that has been added to the water, dishwasher detergent, or starchy ingredients such as pasta, pulses, and potatoes. These discolorations are completely harmless and can be easily removed, using cleaning vinegar and a washing-up brush.

Special products for stainless steel are also available.

  • Removing stickers

The best way to remove a sticker or persistent adhesive residue, is to warm it up with a hairdryer and nail polish remover to wipe away the adhesive. By following these steps, you should be able to remove any trace of stickers or adhesive residue.

  • How do I Clean and store my GreenPan

Allow your pan to cool completely before washing, to avoid thermal shock, causing the pan to warp. Clean your pan with warm soapy water and a soft sponge to make sure the interior is spotless before storing. All our pans are completely dishwasher safe (except for pans with a wooden handle). We do, however, advise to wash all your pans by hand as dishwasher tablets contain strong chemicals that can cause the non-stick coating to deteriorate. Wash the pan in warm water and clean with a soft sponge or cloth and avoid using scouring pads or steel wool. This will make the non-stick layer un-fit for use. When storing, we recommend that you place a protective sheet in-between your pots and pans to minimize wear and tear.

  • Strange smell while cooking on gas

A strange smell might become evident when cooking on a gas hob. It is often the case that the Bakelite handle of the pan has been exposed to extreme heat (if the pan has not been placed on the hob correctly). Exposing the Bakelite handle to such extreme heat will cause the smell and possibly even some burning of the handle. We strongly recommend matching the size of the pan to the diameter of the hob ring it is cooking on. A safe suggestion is to choose a hob ring that is smaller than the diameter of your pan. The flames coming from the hob must never exceed the bottom of the pan. If the pan has a stainless-steel handle, then it is difficult to trace the source of the smell. We suggest washing the pan thoroughly before using it for the first time as there is no way to guarantee how it has been stored before shipment. Please rest assured that because the Thermolon coating contains no chemically changing materials, no smoke or odour can originate from the coating.

  • Stains on the hob

There are various reasons that stains can appear on a hob surface. The combination of a new pan overheating on a new hob and liquid underneath the pan during cooking are two of the most common reasons.

The best way to remove such stains is heating the stained area on heat level 1 or 2 with another pan on top. Finish cleaning the stain by wiping it down with a microfibre cloth and some special hob cleaner or some washing-up liquid.

A melamine sponge or so called ‘wonder sponge’ is especially effective. These sponges have great results on persistent stains or spots. The melamine sponge works in combination with water, it activates the ‘micro scrubbers’ in the sponge. As you scrub the hob gently with the melamine sponge, the stains will start to be reduced. Repeat the process several times without using any type of detergent as it will make the sponge slippery, and less effective. These sponges are widely available at a low price. A special hob scraper is also an effective tool when used carefully and correctly.
A final important tip is to thoroughly clean and dry the underside of your pan before placing it on the hob. This helps prevent any liquid being trapped and burning onto the two surfaces.

  • My stainless-steel pan shows discolouring after cooking on gas

Be careful to ensure that the flames from the gas hob do not reach beyond the silver flame guard as this prevents the handle overheating.

The discolouration of the outside of the stainless-steel pan can best be cleaned with a specialist metal cleaner.

  • Is my GreenPan dishwasher safe?

Although most of our ranges are dishwasher safe, we still strongly recommend handwashing. The non-stick properties of all ceramic non-stick coatings slowly fade with repeated dishwasher use because of the aggressive detergents in dishwasher soap.

  • Using oil or fat in my GreenPan

Why do I need to use oil or fat?
•Oil conducts heat much better than air resulting in better and crispier frying.
•Oil acts as a buffer so food does not burn that quickly.
•Oil helps in browning food and the development of taste.
•Oil avoids food sticking to the pan. Even liquid food like eggs do need a little oil or butter! A non-stick pan, like our GreenPan, allows the use of less oil, but not eliminating it because of above reasons.

    Be Careful with olive oil
When using any pan, always be sure to use oil or butter. When using pans with a non-stick layer, less oil or butter is needed. Please remember that olive oil, extra virgin olive oil, butter and oil sprays quickly start to smoke and burn when the pan is hot. This causes carbonization of the pan, which can damage the non-stick layer. Another consideration if using (expensive) oil, is that it will turn your healthy fats into unhealthy/saturated fats. Avoid using them in combination with a ceramic non-stick pan.

Here is a useful link about oils and their smoking point. It will be of help in finding the most suitable oil for your needs. What is the best oil to cook with?

Which oils or fats can I use?
We recommend using refined (preferably organic) oils suited for frying with high resistance. Peanut oil or Avocado oil are good oils to start with.
Unrefined oils such as Virgin and extra virgin olive oils, however healthy they might be, are not suitable for frying because even at relatively low temperatures they smoke and burn. This is not just bad for your health; it is also bad for your pan. Every type of oil has a temperature where it starts to smoke, this is the so-called smoking point. When the temperature goes beyond this point, the oil starts to dissolve, and it releases a taste that can ruin your food. Another effect can be carbonization of the pan, which can damage the ceramic layer. We therefore recommend using an oil with a relatively high smoking point when baking or frying. The packaging of oils, available in supermarkets does not always contain information about the smoke point. Our advice is to look for oils with clear information on the packaging that states, “suitable for frying”.
Unrefined oils, such as cold-pressed or extra virgin oil, normally have specific instructions on the packaging.

Avoid using oil sprays such as atomizers, nebulizers, or pumps because small droplets of oil heat-up extremely quickly and causing charring on the non-stick layer. These layers of charring and carbonization cause the non-stick layer to lose its properties.

  • Are stainless-steel pans ovenproof?

The pans are ovenproof to a temperature of 260°.

Please Note! Never put the pan in a microwave.

Please Note! The glass lid of the sauté pan is ovenproof to a temperature of 220°.

  • The metal handle of my pan is heating up.

The handles of our pans have been designed to stay as cool as possible, but we still advise you to use oven mitts or a heat resistant cloth during continual use of the pan or if the oven is hot. If a metal handle has continually been above direct heat, it will inevitably heat-up. The main difference between a metal handle and a normal handle, is that a metal handle will take longer to heat-up.

A handle that has become overheated, can be caused by over exposure to naked flames, the pan overheating or unnecessary heat applied to the sides of the pan.

Ensure that gas flames never rise above the silver flame guard, as it is there to prevent the handle overheating.

  • My pan is not working on induction, but the information in the web shop says it is compatible with induction.

Cooking on an induction hob, is quick, easy, safe, and accurate. There are, however, special pots and pans needed, with a magnetizable base. GreenPan ticks all the boxes: all our pan ranges work perfectly on induction hobs thanks to their special base containing ferromagnetic particles.

A simple and efficient test for induction compatibility is to use a magnet. Hold the magnet up against the base of the pan, if the magnet sticks…then the pan is compatible for induction hobs.

If you use an induction pan on a gas hob, it can always be used on an induction afterwards. Be careful to avoid overheating as this could cause the pan to warp.

A point of note is the diameter of the pan in relation to the diameter of the cooking zone on the induction hob. A wok, for example, has a small base (+/- 15 cm) and in theory should only work on the smallest cooking zone.
For the best results, the diameter of the cooking pans should be larger the diameter of the cooking zone. Ideally the pan should be marginally bigger than the cooking zone. A pan that is much too big for the cooking zone might not heat up sufficiently.

Product Information

  • Are Featherweights Ovenproof?

The Featherweights casserole pan, available from our web shop and via Amazon, is ovenproof. Regrettably, the lids for the Featherweights are not ovenproof. Please refrain from placing your Featherweight in the oven with the lid on.

Our new red Featherweights casserole pan, available from Costco, is completely ovenproof. The lids can be kept on the pan when going into the oven.

  • Nickel Allergies

Some of our frying pans have a handle that rivetted to the side of the pan. These rivets have a special ceramic coating and completely safe. The rivets contain Nickel and if the coating were to be removed you could possibly find traces of Nickel in your food.

If you would prefer not to use this type of frying pan, choose a pan with a Bakelite (plastic handle. The handle in these types of pan is screwed onto a buttress on the side of the pan.

  • Does this ceramic non-stick layer work the same as a traditional non-stick layer?

Thermolon has all the characteristics of a traditional non-stick layer except Thermolon is PFAS-free. Thermolon can withstand temperatures up to 450°C, something that would not be safe to do with a traditional non-stick frying pan. Even if you accidentally overheat a Thermolon GreenPan, it will not start to peel, and no toxic fumes will be released. This is not the case with a traditional non-stick pan! The ceramic Thermolon layers is also an excellent heat conductor enabling you to cook at lower temperatures, saving energy in the process.

  • What kind of chemicals are in a ceramic non-stick layer? Are they harmful?

Thermolon is made from a sand derivative that is turned into a sprayable solution using a Sol-Gel process. Due to the absence of any PFAS chemicals, our non-stick layer is completely safe for our health and the environment.

  • What is the difference between Thermolon and Ceramic?

Thermolon is the ceramic non-stick coating used on all GreenPan non-stick cookware. Thermolon was the 1st ceramic coating on the market. It is manufactured without PFAS, or PFOA, and does not contain any harmful chemicals. Even though other manufacturers have followed The Cookware Company example, we still produce the most advanced ceramic non-stick layer available.

  • Thermal properties of my GreenPan

For long and sustainable lifespan, it is best to gradually heat up your pan instead of placing it on the highest heat setting from cold. On an induction hob the ideal heat setting would be setting 3. Try not to keep your pan on the highest heat setting when on a ceramic or induction hob for too long, as it will deteriorate the non-stick coating. The ceramic coating on our GreenPan pans, conducts heat much more efficiently than traditional pans because of the ceramic non-stick coating. This allows you to achieve the same crispy results on a much lower heat setting! Another advantage is that the pan doesn’t need any pre-heating.

If you are cooking on a gas hob, be so careful as not to let the flames reaching-up above the silver flame guard as it ensures that the handle does not overheat. Do not heat-up the pan without oil or fat. Make sure that you use a pan that is in proportion with the amount of food that needs cooking (i.e., you do not need a 28 cm to cook 1 hamburger).

  • The Cookware Company has its own factory in China producing and coating the pans.

Is this factory free from PFAS chemicals? Our ceramic non-stick coating, Thermolon is made from a sand derivative and completely free of any chemical substances such as PFAS, regardless of where they are made.

This means that all GreenPans are manufactured 100% free of PFAS in our factory.

  • Using utensils in GreenPan

To ensure your pan has a long and healthy life please avoid using any metal utensils or knives in your pan. Metal utensils cause small nicks in the non-stick coating, where food and oil get trapped and will carbonize. By using Nylon, silicone, and wooden utensils you will keep your Thermolon non-stick surface looking like new.
